Think You Know How To Charcoal Grill?
Of course you do. It's not rocket science after all. Of course those of you who douse the charcoal with lighter fluid, flick in a lighted match and run, make it look like a rocket launch. I'll give you a few tips to make your charcoal grilling experience easier and the food will be yummy.
Ok, it's a no brainer not to grill indoors, but it's also helpful to keep the grill away from brush and buildings. You don't want to be on a first name basis with the fire department. Make sure the grill is clean and follow manufacturer's directions to light your gas grill. Using a charcoal grill is also easy. Just be sure you have enough charcoal to cover the bottom of the grill. Build the briquettes into a pyramid shape and squirt about 1/2 c of lighter fluid onto the coals. Wait a few minutes and light with a long handled match or fire starter. Never, ever use gasoline.
When the coals begin to burn and turn white, spread them with tongs to cover the bottom of the grill. It takes 30-45 mintes for a charcoal fire to reach the proper temperature so plan ahead. chimney straters are nice too. They are shaped like a coffee can with a handle. It has two compartments and you can start a good fire without chemicals. Remove the grill racks. Put crumpled newspaper in the bottom and charcoal in the top compartment. Light the newspaper and allow 30 minutes to get teh vcoals going. Once that time has passed, use a heavy oven mitt to pour out the coals and cover the bottom of the grill.
Now for me, terrible fire builder that I am, an electric starter is great. Just put it under the pyramid of charcoal, plug it in and in 8-10 minutes your coals will be ready to spread. Replace the grill racks and get ready to cook.
When cooking burgers, for heaven's sake, do not squish and press the grease out of them while you're cooking. It not only causes flare ups, but it makes the burgers as tough as a hockey puck. Use tongs rather than a fork to avoid having all the juice run out of your steaks, sausage, or hot dogs. A word about flipping the meat continuously, don't! My Daddy would say "Don't mess with it." Burgers and steaks need only be turned once. Burgers will keep a nicer shape and be juicier if you make them with a little dip in the center.
They make very nice racks for roasting chickens and ribs. If you love to grill fish, invest in a fish basket. It will keep the fish from breaking up. A vegetable basket works the same way for smaller cuts of vegetables. Metal skewers are great for shish kebobs. They won't catch fire and they heat evenly. If you like wooden skewers, just be sure to soak them first in water. It's a good idea to keep a spray bottle of water nearby to contain any flare ups.
Remember charcoal grilling is supposed to be fun and relaxing. You do have to watch the fire, of course, but you don't need to constantly run around fiddling with the food. Have a cold drink and let the grill do the work.
