Your Questions About How To Cook Corn On The Grill

Monday, January 23rd, 2012

Michael asks…

Corn and potatoes on the grill?

I am planning a surprise BBQ date for my hubby tonight, but am pregnant and cannot stand the idea of meat. (YUK)

I wanted to make Corn on the cob, potatoes and pineapple rings on the grill but am unsure on how to do this. I am looking online and am finding so many different ways to do it and wanted to take a poll of what you guys think tastes best.

So, what are your fave ways to cook corn and potatoes on the grill?

**Side note, corn is out of season, so i can only purchase the stuff in fresh produce that is almost all the way shucked***

Mark answers:

Why would you wrap stuff in foil to grill it? All you’re accomplishing is steaming your food which you could do on the stove or in your oven. Foil is just a crutch for people who don’t know how to use a grill properly.

The point of grilling is for that nice caramelization and “charred” flavor on your food.

I agree that you should par boil your potatoes before grilling them. They’ll take forever on a grill and will burn on the outside before they’re done on the inside. I like to cut them about 1/2 – 3/4 of an inch, par boil then grill them quickly on high heat to finish them off.

I grill corn on the grill all the time, withOUT the husk and withOUT the foil. Put a little oil on your corn with whatever seasoning you like. Place directly on the cooler part of your grill. Your corn will get a nice and smokey flavor and get a great color on it. Be careful with corn as it can burn if you’re not watching it.

Your Questions About The Best Charcoal Smoker

Sunday, January 22nd, 2012

William asks…

what is the best way to smoke some sirloin steaks?

i have a charcoal smoker, and have smoked briskets, ribs, roasts and such. i need some tips on smoking steaks. acutally ideas and tips on smoking any type of meat will be appreciated

Mark answers:

To make um real tender, marinate all night or at least 6 hrs. In Zesty Italian Dressing (I buy the dollar store kind just as good for marinating) . A zip lock bag works well. Drain and before you put on the grill, you might want to sprinkle some Cavenders and pepper or your favorite seasoning. (Maybe Cajun) just before you put them on. VERY IMPORTANT….Get those coals real hot BEFORE YOU LAY THAT STEAK ON THERE! When you put it on you want it to sizzle, that’s how you get those beautiful grill lines. Brown both sides, lower the heat (close holes almost shut), close the lid, let it go about 10 to 15 for well done. Of course I like mine on there a total of 7 min. Rare and juicy!!!! Hope I helped!

Your Questions About How To Cook Ribs On The Grill Gas

Saturday, January 21st, 2012

Sharon asks…

How to get tender oven baked or gas grilled (and or smoked on grill) ribs?

I always boil my ribs for 40 mins before cooking. Is that a mistake? I know that the lower the temperature, the higher the cooking time. But what is a good equilibrium so that the cooking time isnt more than 2 hours.

thanks

Mark answers:

Use tenderizer, but look for one that has papain in it. Put the meat in a bag w/tenderizer and some rice wine vinegar for a few hours(or more). I boil my ribs too, that way all you have to do is crisp the ribs on the grill, they are always tender.

Your Questions About Cooking Steaks On The Grill Time

Friday, January 20th, 2012

Joseph asks…

I am going to cook about 14 fillet steaks on the grill at night.?

I won’t be able to see them well, so I will have to grill them by time. These steaks are about 1″ thick. What is the best way to season and marinate? And how many minutes do I grill them on each side?

Mark answers:

Don’t marinate them and don’t do anything but grill them. Some wet hickory chips for smoke.
Really HOT coals.

Four to five minutes on the first side. Do not turn them with a fork or poke holes in them. Use tongs.

Three minutes on the second side.

Do not eat them the minute you get them off the grill. Let them set for ten minutes.

I always pile the butter(real butter) on them and let it melt while they are setting. Great juice to pour over the meat after it is cut up!!

Hear that? It is me knocking on the door!

Your Questions About How To Cook Potatoes On The Grill

Thursday, January 19th, 2012

Ruth asks…

do you like my story so far?

1.Parties

I couldn’t believe how much this house felt like home to me. I’ve been here for two weeks, and it reminded me of my old house. Since the first day of school is starting soon, mom wants me to have a party and invite the other kids in my neighborhood. I had thought it was reckless and sudden, but now the idea was turning in my head. Maybe this would be a good thing.

“Put it in there for thirty minutes.” Mom said, sternly, but was smiling. She was helping me cook for the party. I’m 15, but I can only cook grilled cheese, or scrambled eggs. I followed her orders, putting the platter of biscuits into the oven.
“Okay.” I murmured, taking off my potholders. I loved the way my mom cooks. She’s so creative, and every things edible, unlike my unskilled cooking.
“It’s a good thing you’re helping me.” I told my mother, sitting down at the kitchen table.
“Yes.” She agreed, turning on the oven timer. “Or else our house would be on fire, or you food poisoned someone.” She joked, sitting beside me. We both laughed. But it was true.
We hadn’t had this much fun since before we moved. I was glad she was glad.
“Want to start making the potato soup?” She asked, solemnly. I nodded. Cooking was fun. With her.

We got up, and I took a knife from the table drawer while she put the pan of water on the stove. I began chopping up the potatoes, while she worked by the stove. I decided to turn on the radio. Clair De Lune. That’s one thing we have in common. We both love classical music. I danced while I cut up the potatoes, and mom hummed along. Then the phone rang. Mom started to walk to the phone, but I stopped her. “I’ll get it.” I called. She hesitated.
“Okay.”
I put the knife down and ran to the phone. I answered on the third ring. “Hello?” I asked, still moving side to side.
“Hi.” Said a husky, female voice. I stopped moving.
“Who is this?” I asked, and my mom gave me a worried look.
“Cassie.”
I sighed in relief. “It’s Cassie.” I whispered to my mom. Then went back to the call. Cassie was one of the kids my age that lived in my neighborhood.
“Oh.” I said. “Hi.”
“Is this Luna Summers?” Asked Cassie. I nodded, knowing she couldn’t see me.
“Yes.”
The line went silent, just as the radio changed to Pachelbel’s Canon.
“Um.. I just wanted to know when the party was.” Asked the unsure voice.
“Um- Seven.” I stammered, twirling my finger in the phone cord.
“Ok.” Said Cassie, a little more sure of herself.
“You should invite her to do something.” My mom protested.
“Tomorrow’s Saturday. Invite her to see a movie or something!”
I shot her a glare, but nodded.
“Um-.” Cassie and me stammered at the same time.
“I was wondering if you’d like to see a movie tomorrow. To get to know each other.” I asked, quickly.
The line was silent again.
“Sure. I’d love to!” Said Cassie, excitingly.
“Cool.” I muttered.
“Ok! See you tomorrow at..four thirty?”
I thought for a second.
“Yeah.”
“Ok. Bye!”
“See you.” I waited until she hung up before I put the phone down. Then a shot a stinging look at my mother.”You know i’m a terrible person at making conversation!” I growled.
“It’ll be fun.” My mom retorted. “Finish the potatoes.” I had no choice but to obey.
When that was finished, the biscuits were done. Almost everything was ready by four o’ three.

When all the cooking was done, I made some warm tea. Then we watched some tv, and when I got bored, I stretched, and announced I was going out.
“Where?” My mom asked.
“Just to get a little shopping down.” I explained, slipping on my coat. My mother followed me to the door.
“Luna, I was wondering if next week you would like to go to the beach with me.” She prompted.
“Sure.” I answered, putting on my orange cap.
“Well we should go buy some swimsuits.” She called as I hustled out the door. She was trailing behind me. I nodded.
“So I should go with you..” She muttered quietly. I froze at my front car door.
“Ok. Get in.” I smirked at her.
“My car goes over thirty.” I said.
“Unlike your beast.” I added.
She laughed.
I didn’t know if it was because she wanted to spend time with me, or she didn’t want to be alone, but we were laughing as we drove away.

Ok this took a while to write, about 70 minutes, so rate!

Mark answers:

I like it a lot. I like how you vary the way your characters speak, using “explained” and “retorted” but not over-doing it and throwing “said” in there occasionally. Just a bit of constructive criticism though, maybe you could introduce the story in a more concise way? If you keep taking 70 minutes to write each small passage, it will take you ages, and you may get bored before you finish it…just clean it up a little bit, but it’s really good! (Y)

Your Questions About How To Cook Corn On The Grill

Wednesday, January 18th, 2012

Laura asks…

How do you cook fresh corn on the cob?

I have always bought frozen corn on the cob. And all I had to do was put it in a pot of cold water and put it on high until it came to a boil, cover and reduce heat. Cook for 4-6 minutes.
The one time I did buy fresh corn I made it on the grill, but I don’t have time for the grill tonight. What is the best way to cook the corn on the cob on the stove? Thanks for your help.
Don’t laugh, but what does shuck it mean? I am a better baker than I am a cook, so cut me some slack! :)

Mark answers:

Shuck it, put it in a pot of generously salted boiling water for about 8 minutes without reducing the heat. You want to keep it at a pretty rolling boil. Should be good to go.

I leave the cover off the pot. That way it doesn’t boil over as easily.

Your Questions About The Best Charcoal Smoker

Tuesday, January 17th, 2012

Thomas asks…

What is the best way to prepare wood chips for smoking pork ribs?

Im using a basic charcoal smoker. Also should they be placed straight onto the charcoal or in a tin foil pouch? Detailed answers please and thank you.

Mark answers:

FOR GODS SAKE!!!!!!! Don’t listen to Missy. Cedar will make the pork inedible with the oils it will cover it with. Alder or any hard wood is okay, soak some in a pail of water and mix the wet and some dry in a foil pouch and put right on the coals. Make up 2 or 3 packs and swap them out as they stop smoking.

Your Questions About How To Cook Ribs On The Grill How Long

Monday, January 16th, 2012

Jenny asks…

how long do i cook boneless country style pork ribs in crockpot?

i am going to cook them in bbq sauce in the crockpot and then throw them on the bbq grill for a bit afterwards. i have heard a bunch of different opions on settings and cook times. i’m leaning towards 4-6 hours on high…sound right? what do you think?
how long if i put it on low?

Mark answers:

The 4-6 hours on high is what is recommended in my crockpot cookbook. But they may be pretty tender at that point so don’t be surprised if they fall apart when you try to put them on the grill. They’ll taste fine if you don’t get them on the grill.

Your Questions About Cooking Steaks On The Grill Medium Rare

Sunday, January 15th, 2012

David asks…

how do you tell if a steak is medium rare without cutting into it?

I like cooking steak on the grill, but as often as i check it for the right amoun of cooking, I get a lot of ripped open steak and its not really good for presenting.

Mark answers:

Restaurants use the hand guide. Touch your thumb to your first finger closest to it. Touch your palm with your other hand. This is how tender a rare steak should be. Touch your thumb to your second finger and this is medium rare.. Third finger is medium, and pinky finger is well done.. Try it, it works.
